The ethanol causes it to leech flavor chemicals out of the wood. It matures in the casks for a minimum of three years. The whisky is put into oak casks and stored. The wort is cooled and yeast is added to it to begin fermentation. The type of grains used in the fermentation process defines what type of whisky you’ll end up with.ĭistillation separates the different chemicals in the mixture based on their boiling points. After the sugars dissolve, the resulting liquid becomes 'wort'. The combination of malt and water is called 'mash'. The ground-down malt, now called 'grist', is added to water to extract soluble sugars. This converts the starch in barley into soluble sugars to make alcohol. The flavour of whisky depends on a slew of factors, including the type of grains used, the distillation technique, and above all else, the ageing process.īarley is soaked for two to three days in warm water and then spread on the floor of a building called a malting house. When volatile compounds from the liquid accumulate in the headspace, they can contribute to the drink's overall flavour profile. They say this is because this aroma is associated with a type of molecule called a 'lactone' which is hydrophobic, or repelled by water.Īs water is added, these molecules make their way into the headspace. '"Oak" aroma appears to evolve into a "cedar" aroma with dilution,' the researchers wrote. Many of the Scotch whiskies started out with a smoky, peat aroma, but as they were diluted they moved towards a fruitier aroma known as pome.Īmerican bourbons were mostly associated with vanilla and oak scents at first, but as more water was added, they took on more aromas of the corn and grains used to make them. The whisky types fit into two distinct styles, one that included single malt and blended Scotches, and the other that included American bourbons and ryes.Ī trained sensory panel of 20 experts also assessed six of the whiskies as they were diluted - three Scotches and three bourbons.īoth tests showed that adding a little water could change how the whiskies smelt. For the study, published in Foods, the researchers analysed the chemical composition of the headspace - the area between the surface of the liquid and the top of the glass it is in - of different whiskies as they were increasingly diluted with water.
